~ After security, before boarding ~

We were heading out for a trip to the states, and feeling anxious – as is normal for us whenever travel plans loom. So to keep ahead of the game, we checked in early and got through the security lines with plenty of time to spare. Hoping for something to eat in the mean time, we found a new eatery at the far end of the departure lounge. Johney Burger offers many options along the lines of the hamburger model, but they put their own personal spin on the iconic sandwich: burgers on Johnnycakes!

With a nod to some of the more popular spots across our friendly island, Johney Burger has a large map of St. Maarten/St. Martin on the wall, with seven points of interest highlighted. A burger is named for each of these points on the map. The Dutchsiders include three beef burgers with lettuce and tomato: the "Border Burger" with blue cheese, an onion ring and some spicy sauce, the "Philipsburger" which has caramelized onions, sautéed mushrooms and cheddar cheese, and the "SXM" which has gouda cheese, bacon and a plantain!

There is also a "Mahi Maho" which has a filet of fresh fish with red onion marmalade and mango salsa. The Frenchsider sandwiches feature two beef and one chicken burger. The "Orient Beach Burger" is a beef patty with sundried tomato and mozzarella, the "Baie Rouge Burger" is jacked up with fried jalapenos mango chutney and pepper jack cheese and last but not least is the "Grand Case" which is made with a free range chicken fillet bacon provolone cheese and guacamole. There is also the possibility that you can invent your own unique combination of any of these ingredients, if you're feeling inspired.

All these burgers are served on a Johneycake, the only burger bar anywhere with that claim! Johnnycakes originated as Journey cakes, so just like travellers of old, we can now use the big nutrition packed into a small package to energize our expeditions. It's a tribute to our heritage and something that is clearly popular among the travellers in the airport.

Served with French fries, these burgers are made from USDA choice beef, certified free range/antibiotic free chicken and freshly caught mahi-mahi from our local waters. Three salads are also on the menu as well as a veggie burger and a selection of sides and extra toppings. The ladies behind the counter are all smiles, quick on the orders, friendly and efficient, just what every traveller needs.

I tried the Grand Case while my traveling companion opted for the Philipsburger. I was impressed with the generous portions and the juiciness of the chicken filet. The guacamole was fresh and the bacon made a great counterpoint to the other toppings. And it was a beautiful sandwich besides all that! My mate's burger was also pronounced delicious, and seemed a little over-loaded; however, the Johnnycake was capable of keeping the many ingredients in place. Both sandwiches were cooked to perfection and served in diner-style baskets with fries on the side. A cheerful presentation – we had time to enjoy every last bite before boarding and leaving on a jet plane. Fortunately, we did know when we'd be coming back again! And we also know where to dine before each flight out of PJIA. Johney Burger is the place!
